One Pot Chicken, Summer Vegetable and Brown Rice Sauté

This is one of my all time favorite ways to make dinner when I am on a limited time schedule!  You know when your kids have to be run to an after school activity right around dinner time, dance, swim class, parkour…fill in the blank, I am sure all parents out there know exactly what I am talking about.  You open the fridge to find leftover chicken (or burgers, steak, sausage…), some leftover rice or other grain, and a mixed grouping of veggies.  Sure you could just reheat everything, use 3 pans, and watch your families face when you declare leftovers for dinner…or you can sauté some garlic and onions, toss in some diced fresh veggies, add your leftover meat, your leftover rice and voila a truly beautiful one pot wonder is served.

Creating this beautiful pan of yumminess could not be easier!  Tonite I had (see above picture) 2 grilled chicken legs, a package of fully cooked chicken sausage, a yellow squash, an heirloom tomato, some dragon tongue beans, some bell peppers and about 2 cups of rice.

I diced the chicken, veggies and an onion, crushed a few cloves of garlic, removed the stem from the kale, gave that a good chopping so no one in my house can complain, and finally sliced the chicken sausage.  In the pan goes all the veggies, chicken sausage, onions and garlic as well as thyme with a generous swirl of olive oil.  I sautéed them together for about 10-15 minutes, letting all the flavors meld, and getting the veggies to crisp tender.  Then add your cooked rice, chicken and a splash of stock if needed for moisture.  Heat rice and chicken through and dinner is served!

Tonite my toddler was so excited to dive into this bowl of deliciousness he grabbed his steaming hot bowl off the island when my back was turned and walked it to his place at the table all by himself (yikes!). Not to worry the rice and toddler both survived fully intact.

One Pot Chicken, Summer Vegetable and Brown Rice Sauté

Ingredients

  • 2 cups cooked rice
  • 2-3 cups chopped fresh veggies (I used squash, beans, peppers, kale and tomato)
  • 1 lb precooked chicken sausage sliced
  • 2 cloves garlic crushed
  • 1 onion diced
  • 1 T fresh thyme
  • 2-4 Tablespoons olive oil for sautéing

Instructions

  1. Heat large skillet over medium high heat
  2. Drizzle enough oil into the pan to coat the entire bottom
  3. Sautè veggies, thyme, chicken, onion and garlic for 10-15 minutes until veggies are crisp tender
  4. Add more oil to the pan if it gets too dry
  5. Lower heat to medium add rice and cover
  6. Cook until rice is heated through.
  7. Salt and pepper to taste and enjoy!
